Gosht Kabab (Savory Meat Kabobs)
These skewered treats are the perfect hors d'oeuvre. Use whatever protein you like.

- 2 lbs Tenderloin of Lamb (cut to ½-inch cubes)
- 2 lbs Chicken Thighs
- 2 lbs Large Shrimp
- 1 brick Firm Tofu
- ½ cup Olive Oil
- Zest & Juice of Two Lemons
- 1 tbsp Salt
- 1 tbsp Crushed Black Pepper
- 2 tbsp Curry Powder
- 1 tbsp Cumin
- ⅛ cup White Rice Vinegar
- 2 tbsp Sugar
Trim and cut Lamb, Chicken Thighs and Tofu into ½-inch cubes.
Make marinade by mixing together Olive Oil, Lemon Zest, Lemon Juice, Salt, Black Pepper, Curry Powder, Cumin, White Rice Vinegar and Sugar.
Pour marinade over meats and fish and refrigerate for at least 1-2 hours.
Soak skewers in hot water then place meat, fish and tofu on separate skewers.
Place on a hot lightly oiled flat grill and cook approximately 2-3 minutes on each side.
