Golden Almond Biscotti
A crunchy Italian biscuit that is equally at home with a cup of coffee or a glass of red wine.

- 1 cup Sugar
- 1 cup Brown Sugar
- 2 cups Flour
- ½ tsp Cinnamon
- 1 tsp Baking Powder
- 3 tsp Softened Butter
- 2 Eggs (beaten)
- 3 tbsp Pure Vanilla Extract
- 3 cups Slivered Almonds (or 2 cups pistachio nuts + 2 cups dried cranberries)
Blend Sugar, Brown Sugar, Flour, Cinnamon, Baking Powder and Butter in mixer.
Add Beaten Eggs and Pure Vanilla Extract. Blend and add Almonds (or pistachio nuts and dried cranberries).
Blend and roll into 2" logs. Place on baking sheet - flatten slightly with a damp hand - brush with egg wash and bake in a 350℉ oven for 25-30 minutes. Let cool then slice logs into ¼" or so slices and place on baking sheet and bake in a 250℉ oven for 10-15 minutes or until desired texture is reached.
