This is such a good dish that it is truly worth the effort of making your own pasta (unless of course you live near a specialty shop that offers gourmet pastas). If you omit the fish this would make a delicious vegan entrée. The roasted red pepper pasta is really the star of this dish but you can certainly use store-bought fettuccini or any pasta you prefer if you don't have the time to make homemade pasta.If shrimp and cod aren't your favorite fish substitute them for whatever fish you like that cook quickly such as scallops, lobster, crab, salmon or tilapia for example.
1lbCleaned & Deveined Raw Shrimp(under 21 count is perfect for this dish)
1lbRinsed Cod(cut into 2" chunks)
3tbspHot Sauce(depending on degree of heat you prefer - your guests can always add more)
1tbspCrushed Red Pepper Flakes
Instructions
Pasta
In processor place Flour, Semolina, Olive Oil, Roasted Red Peppers and Salt. Run until dough is formed adding a few drops of water as needed until dough comes away from sides of bowl.
Remove dough, knead for 1 minute and let rest for 15 minutes.
Roll into sheets and cut into fettuccini. Place on a lightly floured surface until ready to boil.
Sauce
In large pan sauté Olive Oil, Garlic and Shallots for 2-3 minutes just to soften shallots.
Add Diced Tomato, Salt, Crushed Black Pepper, Sugar and Basil and cook for about 20 minutes.
Add Raw Shrimp, Cod, Hot Sauce and Crushed Red Pepper Flakes and cook for about 3 minutes while pasta is cooking.
Cook and Combine
Put fettuccini in salted boiling water and cook for about 3 minutes. Drain and toss into sauté pan with sauce.
