Duck Satay w/ Wild Berry Coulis

Ingredients
  

  • 2 Duck Breasts (cleaned and trimmed)
  • ¼ cup Orange Juice
  • 2 tbsp White Rice Vinegar
  • 2 tbsp Dijon Mustard
  • ¼ tsp Salt
  • ½ tsp Black Pepper
  • ½ tsp Garlic Powder
  • ½ tsp Onion Powder
  • Wild Berry Coulis (prepared separately)

Instructions
 

  • Place Duck Breasts in mixing bowl then add Orange Juice, White Rice Vinegar, Dijon Mustard, Salt, Black Pepper, Garlic Powder and Onion Powder. Mix to blend and coat duck. Let marinate for 1 hour in refrigerator.
  • Place duck breasts on a lightly oiled hot griddle and cook for 3 minutes on each side. Remove from heat and let rest 2-3 minutes before slicing.
  • Drizzle with Wild Berry Coulis or serve with coulis on side for dipping.
