Chocolate Macadamia Nut Cookies
This is a rich cookie and I’m sure all your “big” kids will love them.

- 2½ sticks Unsalted Butter (at room temperature)
- 1½ cups Sugar
- ½ cup Brown Sugar
- 2 Lare Eggs
- 2 Egg Yolks
- 1 tbsp Vanilla Extract
- 1 tsp Instant Espresso Powder
- ¾ cup Dutch Cocoa Powder
- 2 cups Flour
- 1 tsp Baking Soda
- ½ tsp Salt
- ½ cup Macadamia Nuts
In a stand mixer cream Unsalted Butter, Sugar, Brown Sugar, Eggs, Egg Yolks, Vanilla Extract and Instant Espresso Powder.
In separate bowl sift together Dutch Cocoa Powder, Flour, Baking Soda and Salt.
Slowly add flour mixture to sugar mixture then add Macadamia Nuts. Gently fold to blend nuts into batter. Let chill 20-30 minutes in refrigerator.
Scoop onto a parchment-lined cookie sheet and bake in a 350℉ oven for 12-15 minutes. Let cool before serving.
