Chicken Meatballs w/ Apple Jack Glaze

Chicken Meatballs
- 2 lbs Ground Chicken (you can also use turkey or a mix of the two)
- 1 Onion
- 2 cloves Garlic
- ½ cup Fresh Cilantro
- 3 Eggs
- 1 Grated Apple
- ½ cup Hellmann's Mayonnaise
- ¼ cup Olive Oil
- ½ cup Grated Pecorino Romano Cheese
- ½ tsp Salt
- ½ tsp Black Pepper
- 3 tbsp Dried Parsley Flakes
- 1-2 cups Breadcrumbs
Apple Jack Glaze
- ½ cup Applesauce
- 1 Diced Apple
- 1 cup Apple Jack Liquor
- ½ cup Sugar
- ¼ cup Water
Chicken Meatballs
In large mixing bowl place Ground Chicken.
In processor puree Onion, Garlic and Cilantro and add pureed onion mixture to ground meat and gently toss.
Add Eggs, Grated Apple, Mayonnaise, Olive Oil, Grated Pecorino Romano Cheese, Salt, Black Pepper, Dried Parsley Flakes and Breadcrumbs (add breadcrumbs a little at a time to reach desired texture. Blend gently and form desired size meatballs, a 1oz scoop for cocktail size meatballs is perfect.
Place on parchment-lined baking sheet. Drizzle with a little olive oil and bake in a 350℉ oven for 20-25 minutes or until golden brown and fully cooked. Toss with Apple Jack Sauce.
Apple Jack Sauce
In saucepan place Applesauce, Diced Apple, Apple Jack Liquor, Sugar and Water and let sauce simmer and reduce. Pour over meatballs.
