Caviar & Blinis
Buy the best caviar you can afford - it does make a difference but there is very good caviar available at very reasonable prices. You don't have to spend $1,000 a tin.

Blinis
- 1 cup Whole Wheat Flour
- ½ cup All-purpose Flour
- ½ cup Water
- ½ cup Beer
- ¼ tsp Salt
- ½ tsp Sugar
- 1 tbsp Vegetable Oil
- 1 tbsp Lemon Juice
- 1 Egg
Caviar
- Caviar (buy the best you can afford - black caviar is always my preference but a good red roe is also delicious)
Serve
- Crème Fraiche (prepared separately)
Blinis
For blini make a whole wheat pancake batter and make 1½ inch round mini pancakes (or buy them at the shop where you buy the caviar).
To make batter place all ingredients into a bowl and mix then let rest for 10 minutes before making blinis. If batter is too thick add a little more water or beer - 1 tbsp at a time. If it is too thin add a little flour 1 tbsp at a time.
Build blinis and let them cook in well buttered pan until bubbles form and it is golden brown - turn and cook 2 more minutes.
Caviar
Serve Caviar in a glass bowl sitting in another glass bowl of ice. Use a mother-of-pearl spoon for caviar (they aren't very expensive and nice to have on hand).
Place warm blini on a small platter with a bowl of Crème Fraiche on the side.
Additional Serving Options
If you also serve small toast points you will also need some whipped sweet butter and a few lemon wedges.
