Broccoli & Carrot Cole Slaw w/ Golden Raisins

This is a colorful and delicious alternative to traditional cole slaw.

Ingredients
  

  • 1 bag Broccoli Slaw (in the produce section of the grocery store or cut broccoli stems into small matchstick pieces)
  • 2-3 Carrots (peel and shred)
  • ½ cup Hellmann's Mayonnaise
  • ¼ cup Sour Cream (or plain Greek yogurt)
  • Zest & Juice of One Lemon
  • 2 tbsp White Rice Vinegar
  • 1 tbsp Salt
  • ½ tbsp Black Pepper
  • 1 tbsp Sugar
  • 1 tsp Onion Powder
  • 1 tsp Garlic Powder
  • ½ cup Golden Raisins
  • 1 tbsp Chopped Pickled Ginger (optional)

Instructions
 

  • Rinse and drain Broccoli Slaw. Peel and shred Carrots. Toss broccoli and carrots in mixing bowl.
  • To mixing bowl add Mayonnaise, Sour Cream, Lemon Zest, Lemon Juice, White Rice Vinegar, Salt, Black Pepper, Sugar, Onion Powder, Garlic Powder and Raisins. At your option you can also add Pickled Ginger.
  • Blend well and refrigerate at least 2 hours before serving.
