Make a Sofrito. In processor blend Onion, Garlic, Green Pepper, Jalapeño and Cilantro.
Black Beans
In saucepan sauté Olive Oil, Sofrito, Lime Zest and Lime juice. Cook for 5 minutes.
Add Black Beans and cook for 10-15 minutes. Add a bit of water if needed.
Mayo Mixture
Mix together Mayonnaise, Cilantro, Chipotle Sauce and Hot Sauce.
Assemble & Cook
Take Soft Corn Tortilla Shells and spread with Mayo Mixture. Then spread top with Beans and Queso Fresco and cover with another tortilla shell that has been spread with Mayo Mixture.
Place on a hot flat griddle and cook for 3 minutes on each side or until golden brown. Serve with salsa - guacamole - sour cream.
