Strawberry Preserve(optional for a filled beignet)
Instructions
Dough
Mix together 1½ cups Warm Water (make sure it is not too hot or the yeast will die), Sugar and Yeast. Let rest for 5 minutes to let yeast develop.
In mixing bowl fitted with a dough hook combine Eggs, Salt, Evaporated Milk and Corn Oil. Add Yeast Mixture to mixing bowl.
In a separate bowl sift together Flour, Baking Powder and Salt. Slowly add flour to mixing bowl and let run to form dough. Remove from bowl and place on lightly floured surface and gently knead for 2-3 minutes. Let dough rest for 2 hours.
Cook and Serve
Cut dough into 2" squares and deep fry until golden. (For a filled beignet place 1 tsp Strawberry preserve on dough and fold over before frying.)
