Barfi (Fudge)
This is a classic Indian sweet treat that is a perfect little bite after a delightful ethnic meal.

- 2 cans Unsweetened Evaporated Milk (about 16 oz)
- 5 tbsp Sugar (as needed depending on desired sweetness)
- ¼ tsp Cardamom
- ½ cup Chopped ALmonds (or cashews are great in this dessert too - or mix the two)
- ½ cup Pistachio Nut Meats
- ½ cup Dried Apricots (optional; or any other dried fruit you like such as raisins, cranberries or dates)
- 3-4 tbsp Milk
- 1-2 sprigs Saffron
Butter a parchment lined pan and set aside.
In a heavy bottom saucepan place Unsweetened Evaporated Milk. Bring to a boil.
Add Sugar (as needed depending on desired sweetness and Cardamom. Reduce heat tom simmer and gently cook until mixture slightly thickens.
Remove from heat and add Almonds, Pistachio Nut Meats and Optional Dried Fruit.
Pour batter into prepared pan and smooth to an even layer.
Heat Milk and Saffron in a clean saucepan. Let milk rest to absorb the saffron then pour flavored milk over barfi mixture in the pan and let set for 5 minutes. Refrigerate until ready to serve.
To serve remove from pan and remove parchment paper then cut into small squares or triangles.
