Cherrystone Clams(quantity based on number of guests)
¼cupOlive Oil
1Finely Diced Onion
2clovesMinced Garlic
1cupBreadcrumbs
½cupPecorino Romano Cheese
¼cupWhite Wine(or more if needed)
2tbspLemon Juice
3tbspChopped Flat Leave Parsley
2tbspAdditional Olive Oil
1tspCrushed Black Pepper
Instructions
Clean and shuck Cherrystone Clams. Place meat back in half shell.
Prepare filling. Sauté Olive Oil, Onion and Garlic for 4 minutes.
Add Rough Chopped Clams, Breadcrumbs, Pecorino Romano Cheese, White Wine, Lemon Juice, Parsley, Additional Olive Oil and Crushed Black Pepper and blend.
Top raw clams with filling packing gently.
Bake in 350℉ oven for 15 minutes or until golden brown and hot. Serve with lemon wedges.
