Baby Greens w/ Warm Goat Cheese

Ingredients
  

  • Variety of Baby Greens (spinach, arugula, bibb, endive, radicchio or anything you prefer)

Egg Wash

  • 2 Eggs
  • 1 tbsp Olive Oil
  • 1 pinch Salt
  • 1 pinch Black Pepper

Breadcrumbs

  • 1 cup Panko Breadcrumbs
  • 2 tbsp Flour
  • 1 tbsp Parsley Flakes
  • ½ tsp Garlic Powder
  • 2 tbsp Parmesan Cheese

Goat Cheese

  • 1 log Goat Cheese (cut into ½" slices)

Dressing

  • Olive Oil
  • Lemon Juice
  • 1 pinch Salt
  • 1 pinch Frech Cracked Black Pepper

Instructions
 

  • Wash and dry variety of Baby Greens.
  • Make egg wash blending Eggs, Olive Oil, Salt and Black Pepper.
  • Prepare breadcrumbs mixing Panko Breadcrumbs, Flour, Parsley Flakes, Garlic Powder and Parmesan Cheese.
  • Cut Goat Cheese into ½" slices.
  • Dip cheese in egg wash then breadcrumb mixture. Place on baking sheet lightly brushed with olive oil. Very lightly drizzle coated cheese slices with olive oil.
  • Bake in 400℉ oven for 6-8 minutes or until golden brown.
  • Place greens on plate and dress with Olive Oil, Lemon Juice, Salt and Black Pepper. Place warm goat cheese slice on top of salad and serve with some toasted walnuts.
