Amaretto Cookies
These are similar to the Italian classic crispy cookies but are a little chewier.

- 4 Egg Whites
- 1 cup Ground Almonds
- 3 tbsp Flour
- ¾ cup Sugar
- ¼ cup Amaretto Liquor
- 1 tsp Vanilla Extract
- Granulated Sugar (to roll cookies)
- Powdered Sugar (to roll cookies)
In bowl of stand mixer place Egg Whites and beat until peaks are formed.
Add Ground Almonds, Flour, Sugar, Amaretto Liquor and Vanilla Extract. Blend to form thick dough.
With a small 1-1½ oz cookie scoop make balls and gently roll in palm of hand.
Roll dough balls first in granulated sugar then in powdered sugar and place on a parchment-lined baking sheet.
Bake in a 325℉ oven for about 15 minutes or until slightly golden brown. Let cool and enjoy with an espresso and a shot of Amaretto.
