Aloo Chaat (Cold Potato Appetizer)
This cold potato appetizer is usually served as an hors d’oeuvre with small forks or toothpicks but it can also be used as a different take on old fashioned potato salad for an international BBQ.

- 3-5 lbs Potatoes (peeled, rinsed and cut into 1½-inch cubes)
- 1 tbsp Sugar
- 1 tbsp Salt
- ½ tbsp Pepper
- 2 tbsp Curry Powder
- 1 tbsp Coriander Powder
- 1 tbsp Onion Powder
- 1 tbsp Garlic Powder
- ¼ cup Hellmann's Mayonnaise
- ¼ cup Plain Greek Yogurt
- 2 tsp Mint
- 2 tbsp Additional Curry Powder
- 3 tbsp Chopped Cilantro
- 1 tbsp Turmeric
- ½ tsp Additional Salt (or as needed)
- ½ tsp Additional Black Pepper
- 1 tsp Additional Onion Powder
- 1 tsp Additional Garlic Powder
Peel, rinse and cut Potatoes into 1½-inch cubes. Place in pot and cover with cold water. Add Sugar, Salt, Pepper, Curry Powder, Coriander Powder, Onion Powder and Garlic Powder.
Bring to a boil, remove from heat, cover and let stand for 10 minutes. Drain potatoes and place in mixing bowl.
To mixing bowl add Mayonnaise, Plain Greek Yogurt, Mint, Additional Curry Powder, Cilantro, Turmeric, Additional Salt, Additional Black Pepper, Additional Onion Powder and Additional Garlic Powder. Blend well and refrigerate at least 3 hours to blend flavors.
