Almond-encrusted Tilapia

This is a lovely way to serve this very simple and mild fish. It is elegant enough for a fancy dinner party and simple enough for a weekday meal.

Ingredients
  

  • 6-8 Tilapia Filets (rinsed and cut down center to make two pieces)

Marinade

  • 1 cup Hellmann's Mayonnaise
  • 2 tbsp Lemon Juice
  • 2 tbsp Dijon Mustard
  • 1 tbsp Onion Powder
  • 1 tbsp Garlic Powder
  • ¼ tsp Salt
  • ½ tsp Crushed Black Pepper

Coating

  • 1 cup Ground Almonds
  • 1 cup Flour
  • ½ cup Cornmeal
  • ¼ cup Panko Breadcrumbs
  • ½ tsp Onion Powder

Cook

  • 3 tbsp Olive Oil
  • ¼ stick Butter

Instructions
 

Marinade

  • Mix together and marinate Tilapia in Mayonnaise, Lemon Juice, Dijon Mustard, Onion Powder, Garlic Powder, Salt and Black Pepper for 30 minutes.

Coating

  • Mix together Ground Almonds, Flour, Cornmeal, Panko Breadcrumbs and Onion Powder.
  • Dip marinated Tilapia in coating. Let rest a few minutes before cooking.

Cook

  • Sauté fish for about 2-3 minutes on each side in Olive Oil and Butter (add a little more olive oil and butter if needed during cooking). Alternatively, you could also place prepared filets on slightly oiled baking sheet and bake in 400℉ oven for about 8-10 minutes or until fish is golden brown and white inside.
